Today was our midterm where we had to make a Cranberry Apple Pie with lattice top, half recipe of Buttermilk Biscuits, and a quarter recipe of Strassburger Cookies.
The Pate Brisee dough we made the day before.
Flaky Pate Brisee
3 oz water
6 oz butter
9 oz pastry flour
5 g salt
11 g sugar
Mealy Pate Brisee
6 oz flour
4 oz butter
2 oz water
3.4 g salt
8.5 g sugar
Cranberry Apple Pie Filling
1 lb apples, peeled, cored, and sliced
4 oz brown sugar
4 oz granulated sugar
1 T orange zest
1 t cinnamon
¼ t salt
1 ½ oz orange juice
1 lb fresh cranberries
1 T cornstarch
Combine apples, sugars, zest, spices, and salt in a saucepan. Dissolve the starch in the orange juice and add to the apples. Cover and simmer until the apples are tender, add the cranberries and cook until they begin to pop. Cool the filling and put into the pie shell. Cover with a lattice top of the flaky dough.
Buttermilk Biscuits – ½ recipe
10 oz bread flour
10 oz pastry flour
10.6 g salt
1 oz sugar
1.25 oz baking powder
7 oz butter
13 oz milk
Egg wash of egg and water
Strassburger Cookies – ¼ recipe
6 oz butter
4 oz powdered sugar
1.5 whole eggs
¾ of an egg yolk
½ tsp vanilla
10 oz cake flour
½ tsp cardamom
